Amara Cole slid the tip of a small paring knife beneath a sliced radish and shifted it two millimeters to the left. The white porcelain bowl held a seared scallop resting on red-veined sorrel. On the left side, the visual weight was off by a thumb’s width. She stepped back, wiped the thin blade on a linen cloth, and let her gaze sweep over the pass. Perfect.

Beside her, Danny Ruiz let out a shaky breath, his thumbs twitching against his apron. The young food runner had been on the floor three weeks, and his polished black dress shoes were already scuffed at the toes.

“You’re breathing like you just ran five miles, Danny,” Amara said without looking at him. Her voice was low and clear, carrying the calm cadence of someone reading a bus timetable.

“It’s Table Four,” Danny whispered, glancing toward the double doors leading to the main dining room. “The guy with the platinum card sent back three vodka martinis because the lemon twists were sliced too thick. He’s looking at me like I’m dirt on his shoe.”

Amara touched the small silver pocket watch tucked inside her apron waist. The antique casing was worn smooth from forty years in Osaka boardrooms before it ended up in her care, left to her by Daisuke Mori. Her thumb traced the engraved initial on the back once before her hand dropped to her side.

“Posture dictates authority,” Amara said softly. “Men like that don’t see a person when you approach the table. They see a fixture. If the fixture shakes, they try to break it. Keep your shoulders back and walk like you own the carpet.”

“Easy for you to say,” Danny muttered, though he straightened his spine and wiped his damp palms on his trousers. “You never blink.”

“I blink when I need to,” she said.

The stainless-steel expediting line vibrated as Sous Chef Marco slammed a flat palm onto the counter. “Order up! Table Six, fire duck and ribeye! Move it!”

Before Danny could pick up his tray, the heavy brass door from the vestibule burst open. Robert Hale, the general manager of Aurelius, staggered into the kitchen alcove like a man running out of breath. His tie was pulled two inches crooked, and his pale forehead glistened under the heat lamps. He raised his wrist and tapped the sapphire crystal of his watch twice, a quick, panicked gesture.

“Clear the line,” Robert gasped, his voice rattling in his chest. “Clear the pass right now.”

Marco didn’t stop plating. “I’ve got six tickets hanging, Robert. What’s the fire?”

“Takahashi,” Robert said, wiping his brow with a crumpled napkin. “Kenji Takahashi just entered the building. He took the express lift straight up.”

The kitchen grew quiet. Even Marco stopped his spoon mid-drizzle over a plate of seared venison.

“He wasn’t on the book for tonight,” Marco said, his voice dropping into a low growl.

“He doesn’t need a reservation,” Robert hissed, leaning against the stainless steel for support. “He holds seventy percent of our holding group’s debt bridge. If that man feels disrespected for five seconds, he calls the note tomorrow morning and puts the padlocks on our doors. He wants total subservience and zero friction.”

Robert turned his panicked eyes straight to Amara. “He’s taking Table Nine.”
